Green Tea Honey Lemon Soda | Fresh, Fizzy & Refreshing

Green Tea Honey Lemon Soda is a light and refreshing drink made with freshly brewed green tea, natural honey, lemon juice, sparkling soda water, and plenty of ice. It is sweet, citrusy, gently fizzy, and perfect for hot days.

Ingredients

  • 1 green tea bag or 1 teaspoon loose-leaf green tea

  • 120 ml hot water

  • 1–2 tablespoons honey

  • 1½ tablespoons fresh lemon juice

  • 100–120 ml chilled soda water or sparkling water

  • 1 cup ice cubes

  • 2–3 thin lemon slices

  • Fresh mint leaves for garnish, optional

Instructions

  1. Heat the water.
    Heat the water until hot but not vigorously boiling. Allow freshly boiled water to cool for approximately 1–2 minutes before brewing the tea.

  2. Brew the green tea.
    Place the green tea bag or loose leaf tea in a heatproof cup. Pour in the hot water and leave it to steep for 2–3 minutes.

  3. Remove the tea.
    Remove the tea bag or strain out the tea leaves. Avoid steeping for too long, as the green tea may become bitter.

  4. Add the honey.
    While the tea is still warm, add the honey and stir until completely dissolved.

  5. Add the lemon juice.
    Pour in the fresh lemon juice and stir gently.

  6. Cool the tea mixture.
    Allow the honey lemon green tea to cool to room temperature. For a colder and stronger drink, refrigerate it for approximately 10–15 minutes.

  7. Prepare the serving glass.
    Fill a tall glass with ice cubes and add the lemon slices.

  8. Pour in the tea.
    Pour the cooled honey lemon green tea over the ice.

  9. Add the soda water.
    Slowly pour in the chilled soda water or sparkling water.

  10. Mix gently.
    Stir carefully once or twice so the drink stays fizzy.

  11. Garnish and serve.
    Add fresh mint leaves and an extra lemon slice, if desired. Serve immediately.

  • Do not brew green tea with vigorously boiling water because it may taste bitter.

  • Steep the tea for only 2–3 minutes.

  • Brew the tea slightly stronger because the soda water and ice will dilute it.

  • Dissolve the honey while the tea is still warm.

  • Allow the tea mixture to cool before adding soda water.

  • Use freshly squeezed lemon juice for the brightest flavour.

  • Add the soda water last to keep the drink fizzy.

  • Stir gently after adding the soda water.

  • Adjust the honey and lemon juice according to your preferred sweetness and tanginess.

  • Chill all the ingredients before assembling the drink so the ice melts more slowly.

  • Add fresh ginger slices while brewing for a warm, spicy variation.

  • Use lime instead of lemon for a sharper citrus flavour.

Storage Instructions

Green Tea Honey Lemon Soda is best enjoyed immediately after adding the soda water.

The honey lemon green tea base can be prepared in advance and stored in a sealed container in the refrigerator for up to 24 hours.

Add fresh ice, lemon slices, and soda water only when ready to serve.

Do not store the completed drink for a long time because it will lose its fizz and become diluted.
