Chocolate Cracker Cake | Easy No-Bake Dessert
Chocolate Cracker Cake is a rich and easy no-bake dessert made with layers of crisp crackers and smooth chocolate cream. As the cake chills, the crackers soften into a tender, cake like texture while still holding the beautiful layers together.
This simple dessert requires no oven and is perfect for family gatherings, parties, or a sweet treat prepared in advance.

Ingredients

For the Chocolate Cream

500 ml cold whipping cream

200 g dark or milk chocolate, finely chopped

150 g sweetened condensed milk

2 tablespoons unsweetened cocoa powder

1 teaspoon vanilla extract

A small pinch of salt

120 g dark or milk chocolate, finely chopped

100 ml whipping cream

1 teaspoon butter, optional

Instructions
Prepare the Chocolate Mixture

Chop the chocolate.
Place the finely chopped chocolate in a heatproof bowl. -
Heat part of the cream.
Pour approximately 150 ml of the whipping cream into a small saucepan. Heat it gently until steaming but not boiling. -
Melt the chocolate.
Pour the hot cream over the chopped chocolate and leave it undisturbed for 2 minutes. -
Stir until smooth.
Mix gently until the chocolate is completely melted and the mixture becomes smooth and glossy. -
Cool the mixture.
Leave the chocolate mixture to cool to room temperature. It should remain pourable but must not be warm when added to the whipped cream.
Prepare the Chocolate Cream

Whip the remaining cream.
Add the remaining cold whipping cream to a large mixing bowl. -
Add the condensed milk.
Pour in the sweetened condensed milk, vanilla extract, cocoa powder, and salt. -
Whip until thickened.
Beat with an electric mixer until the mixture forms soft peaks. -
Add the melted chocolate.
Gradually pour in the cooled chocolate mixture while mixing on low speed. -
Finish the cream.
Continue mixing until the chocolate cream is smooth, thick, and spreadable. Avoid overmixing.
Prepare the Crackers

Pour the fresh milk into a shallow bowl.

Stir in the vanilla extract, if using.

Dip each cracker quickly into the milk for approximately 1 second on each side.

Do not soak the crackers for too long because they may become too soft and break.
Assemble the Cake

Prepare the dish.
Line a loaf tin, square dish, or rectangular container with baking paper or plastic wrap. Leave enough hanging over the sides to help lift the cake out later. -
Create the first layer.
Arrange a single layer of dipped crackers across the bottom of the dish. Break some crackers when necessary to cover any gaps. -
Add the chocolate cream.
Spread a layer of chocolate cream evenly over the crackers. -
Repeat the layers.
Continue layering dipped crackers and chocolate cream until all the ingredients are used. -
Finish the top.
End with a smooth layer of chocolate cream. -
Cover and chill.
Cover the cake and refrigerate it for at least 6 hours. Chilling it overnight gives the best soft, cake like texture.
Prepare the Chocolate Topping

Place the chopped chocolate in a heatproof bowl.

Heat the whipping cream until steaming but not boiling.

Pour the hot cream over the chocolate and leave it for 2 minutes.

Stir until completely smooth.

Add the butter, if using, and mix until glossy.

Leave the topping to cool for approximately 10 minutes before pouring it over the chilled cake.
Decorate and Serve

Remove the chilled cake from the refrigerator.

Lift it carefully from the tin using the baking paper or plastic wrap.
